Homemade Paleo Meatloaf

{Ma, the Meatloaf} As much as I love that quote, I can honestly say I’ve never said that to my mom. As nasty as her meatloaf was growing up you would think I’d never want to eat one again! I remember watching her make it; adding oatmeal, loads of ketchup, and a packet of french onion mix, oh, and beef. Pretty sure she would make boxed mashed potatoes and canned green beans with it. Typical Sunday family dinner for us.

 

Surprisingly, meatloaf brings me back to my childhood memories; where life was once simple and ordinary. Which I can’t say my life is either simple or ordinary now, but I can say it is one life I would not trade.

 

To me, meatloaf is a comfort food which is perfect because I love making my old traditional comfort foods into healthy Paleo alternatives.

 

This meatloaf is free of grains, gluten, dairy, soy, sugar, legumes, and all things processed.

Ingredients

  • 1.5 lb Ground Beef
  • 1 Small Onion Finely Chopped
  • 2 Shredded Carrots
  • 2 TBSP Tomato Paste
  • 1 TBSP EVOO
  • 1 TBSP Coconut Aminos
  • 1 TBSP Dijon Mustard
  • 1 TSP Pepper
  • 1 TSP Oregano
  • 1/2 TSP Salt
  • 2 Cloves Garlic Minced

Instructions

  1. Preheat oven to 350.

  2. Heat a medium-sized skillet over medium-high heat. Add EVOO, garlic, onions, and carrots. Sautee until onions become soft. About five minutes.

  3. In a large bowl combine all ingredients with hands until everything is evenly distributed.

  4. Place ingredients into a bread loaf pan and bake for 50 minutes.

Recipe Notes

Depending on the type of ground beef you used, your loaf may look like it is drowning in fat. This is normal. Let it cool and remove from loaf pan before slicing.
