Hi, Mama! I heard you were looking for a healthier sweet treat for the kids {husband included} and of course, yourself, to enjoy together as a family. Let me tell you; these balls are a huge hit in our household. {Get your mind out of the gutter}

 

YUM! Chocolate chip coconut balls make an excellent sweet and guilt-free snack. They are completely free of allergens, so no more sneaking around after the kids go to bed!

 

Cute story… When my oldest was three, I jokingly told him that these delicious round specimens were meatballs. He loved meatballs at the time, so I figured it was a great way to get him to try something new and health{ier}.

 

He loved these ‘meatballs’ so much he asked to eat them for dinner. Well, being the mean mom I am, I made real meatballs for dinner. Boy, you should have seen the ugly look I got, which was followed by tears of disappointment and a lot of screaming.

 

To this day he still calls them meatballs and doesn’t care for the real deal beef balls anymore.

 

Moral of the story:

There is none.

 

Back to talking about balls… {Get your mind out of the gutter} All ingredients used in this recipe are Paleo staples on our household.

 

Bonus, you can find most of them at your supermarket in the ‘health food’ section.

 

When shopping in the ‘health food’ section, always flip the product over and look at the ingredient list. Just because something says, ‘organic’ or ‘natural’ does not mean it is either organic or natural. Sadly, a lot of these products have unnecessary additives, like sugar, preserves, chemicals, and excessive amounts of salt.

 

Note: If chocolate chips aren’t your thing, replace with 1/2 cup dried cranberries or raisins instead.

Paleo Chocolate Chip Coconut Balls

Paleo/Vegan

Prep Time 5 minutes
Servings 4

Ingredients

  • 2 Cups Unsweetened Shredded Coconut
  • 8 Pitted Dates
  • 1/2 Cup Enjoy Life Mini Chocolate Chips
  • 1/2 Cup Melted Coconut Oil

Instructions

  1. Combine ingredients in food processor.

  2. Roll into one inch balls and place on parchment paper.

  3. Refrigerate for two hours and enjoy!

Recipe Notes

Note: I've also made these into bars!! Place parchment paper into a 8x8 dish and spread the mixture out into a thin layer. Refrigerate for an hour, cut, and enjoy!
