What if I told you, you could make breakfast the night before and enjoy these grab and go muffins the next morning? Well, you can! These egg muffins are easy to throw together and are a time saver on those busy Monday mornings.

These Paleo egg muffins make a great start to any morning. They are also a brilliant way to sneak vegetables into your kid’s daily routines without them noticing. (Unless you have older kids- then good luck! No experience there.)
Free of grains, gluten, dairy, soy, sugar, legumes, and all things processed.
Everyone deserves to start their day out with a nutritious breakfast.
These egg muffins taste great with a side of sausage, bacon, or fresh cut up fruit.

There are probably a thousand different ways to make egg muffins. I’m just sharing our favorite recipe. Please, feel free to change ingredients or add one. I can’t cater to everyone’s likes and dislikes. I can only provide what works for my family.

Breakfast Egg Muffins

Paleo on-the-go breakfast muffins

Ingredients

  • 8 Large Eggs
  • 1/2 Green Pepper Chopped
  • 1/2 Onion Chopped
  • 4 Mushrooms Chopped

Instructions

  1. Preheat oven to 350. Use a muffin pan and place muffin cups into each compartment.
  2. In a small bowl whisk together your eggs. Add vegetables.

  3. Pour egg mixture into muffin cups about 2/3 of the way. Salt and pepper to taste.
  4. Bake for 30 minutes. Let cool in pan.
