{Better than mashed potatoes}

Mashed Parsnips

Paleo & Vegan yet tastes better than mashed potatoes.

Ingredients

  • 2 Large Parsnips
  • 1/4 Cup Coconut Milk
  • Salt & Pepper to taste

Instructions

  1. Fill a medium-sized saucepan with water and bring to a boil. 

  2. Wash, peel, and cut parsnips into one-inch chunks.

  3. Add parsnips to boiling water and cook for twenty minutes.

  4. Drain and cool a little bit before placing into the food processor. Add coconut milk, salt, and pepper to taste. Blend until creamy.

Notes: Double to recipe for more servings or larger families.
