Hi, Mama! The one {of the many things} I hate about our weekday mornings are – making breakfast. Especially those mornings where the kiddos request pancakes. {Ugh, I cringe just thinking about the mess that used to ensue us}.


Usually, when I start my day off by making pancakes, it sets up the rest of the day’s events with disastrous results. Between pancake batter everywhere and the kids dying of hunger, my fight-or-flight response kicks in and my life slowly starts falling apart.


To relieve some stress, I had to come up with a solution to my kid’s pancake addiction that was not only allergy-friendly and Paleo but mess-free.

Mama, place all ingredients {recipe below} into a blender for a quick and mess-free approach to your kids midweek pancake requests.


Take your pancakes to the next level by adding fresh blueberries or Enjoy Life’s mini chocolate chips for the kiddos. However, you savor your pancakes these will make an excellent addition to your breakfast table.

Coconut Flour Paleo Pancakes

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

  • 2/3 Cup Coconut Milk
  • 1/2 Cup Coconut Flour
  • 6 Eggs
  • 6 TBSP Coconut Oil
  • 2 TBSP Honey
  • 1 TSP Baking Powder
  • 1 TSP Vanilla
  • 1/4 TSP Salt


  1. Heat a skillet over medium-high heat (roughly 375).

  2. Place all ingredients in a blender and blend well.

  3. Spray skillet with coconut oil. Pour 1/4 cup batter onto skillet forming pancakes. {The recipe should make 12 pancakes total}.

  4. Cook for 2-3 minutes. Flip and cook for an additional two minutes or until golden brown.
