The reality is, you’ll buy things you don’t need, just to keep the kids quiet as you search for the healthiest tortilla shell package on the shelf. {OMG, there are so many to rummage through} You’ll check out, load the kids back in and head home, only to realize you forgot to put the tortillas in the cart.

 

The thought of dragging the kids out of the house {yet again} turns from a fear to a phobia. You spend the rest of the afternoon searching through Pinterest and Google looking for the perfect homemade allergy-friendly tortilla recipe.

Health up your next taco Tuesday with these homemade arrowroot tortillas.

 

You’ll want to stuff more than your taco fixings into this soft, crepe-like shell. {Get your mind out of the gutter}, and use this recipe for breakfast burritos or mid-day crepes.

 

This recipe will make four tortillas, but you can always double it {and make eight} for larger families or company.

Arrowroot Tortillas

Double recipe for 8 tortillas.
Prep Time 2 minutes
Cook Time 4 minutes
Total Time 6 minutes

Ingredients

  • 1/4 Cup Arrowroot
  • 1/4 Cup Water
  • 1 Egg
  • 1-1/2 TBSP Melted Coconut Oil

Instructions

  1. Whisk all ingredients together. Pour 3 tablespoons in a small greased skillet over medium-high heat.
  2. Cook for two minutes, flip, cook for an additional two.

Best if eaten the same day.
